Oven Canning Safety Warned By Experts
The U S Department of Agriculture cautions against oven canning. Oven processing is dangerous as jars can seal and explode, damaging stoves and causing serious injuries. Meat and low acid vegetables pose added risks and require proper processing methods.
Steam pressure canners for safe home canning
High temperatures are needed to kill bacteria in foods. Oven temps can reach 240 F, but inside jars water boils at 212 F. Sterilizing meats or low acid vegetables would take hours at 212 F. A steam pressure canner is the only practical method to reach the high temps required for safe processing.
