Steaks Make Up A Fourth Of Carcass
Lincoln notes from University of Nebraska specialist Kathryn Cooley that about 24 percent of a steer carcass yields steaks. Porterhouse and T bone lead the top cuts with high tenderness, while sirloin and round offer economical options. Swiss steaks use lower rounds. Frozen fruit salads rely on cream cheese and mayonnaise bases and should be frozen until firm.
