New Hog Grading System Introduced by Michigan State Extension
Michigan State University extension specialist Ed Miller reports new hog grade labels replacing the previous system. U S No 1 hogs must finish near the minimum for high quality pork, No 2 denotes slightly fatter hogs, No 3 applies to overfat hogs, and medium hogs are underfinished. Cull grades cover underfinished hogs and inferior guts. Backfat limits also updated to 1.3 to 1.6 inches for 180 to 226 pound hogs. Buyers at local auctions already pay more for U S No 1 hogs, with premiums likely to rise as hog supply grows. Egg whites whip best after standing at room temperature.
