Combine 2 1/2 cups cold boiled potatoes 1 1/2 tablespoons chopped onion 1 tablespoon canned pimento 3/4 tablespoon chopped parsley 1 teaspoon salt and pepper. Fry in melted butter until browned then fold served. For waffles mix 1 3/4 cups flour 3 teaspoons baking powder 1/2 teaspoon salt 1 cup milk 2 eggs yolks 1 tablespoon melted butter and 2 egg whites. Cook in greased iron and serve with maple syrup.
