Income Does Not Affect Use Of Fats and Oils Says USDA

The USDA report based on 1948 city surveys finds income has limited impact on most fats and oils but influences butter and margarine use. Butter varys from 42 to 82 percent by income, margarine from 40 to 50 percent, with higher income households using more margarine and less butter overall.
