Homemakers Questions Answered on Nuts Freshness
A reader asks how to prevent rancidity in nuts. Returning to shells preserves longer, but cracked nut meats can be frozen for up to a year. For walnuts use dry ice in glass jars or tin cans to expel air, then seal once the dry ice disappears, since oxygen and warmth cause rancidity and insects need air.
