Take Your Choice A Flour For Every Purpose
A guide on three main wheat flours all purpose instant blending and self rising by Mrs Ethel Oldaker Extension home economist explains differences cooking uses and best practices. All purpose flour blends hard and soft wheat suitable for cake and bread and should be sifted before measuring unless a pre sifted recipe is used. Instant blending flour is dense with fine particles and used for gravy sauce and small portions. it requires no pre sift but is pricier. Self rising flour contains leavening and salt and is convenient but may ruin recipes that rely on separate leavening or acidic ingredients. Use only recipes developed for self rising flour or risk over leavening.

Use Baking Soda To Fight Grease Fires
The American Insurance Association warns grease fires cannot be doused with water. Turn off heat and shower baking soda onto the flames or cover the pan with a large lid using a long handle fork. Keep grease from broilers ovens and burners and store grease containers away from stoves to prevent fires. In 1946 home fires killed 6,700 people, many preventable with proper precautions.
