Skunk Cabbage Side Note The First Flower of Spring
Dr. Marion T. Hall of Granbrook Institute notes skunk cabbage is mildly poisonous raw and avoided by most animals. The plant, hardy and long lived, melts through snow with heat from February to March, and was once prepared by Indians by boiling to remove poison and odor. Today it is enjoyed by some herb gourmets like spinach when cooked with butter, salt, and pepper.
