(Ho/) long gram A wild rice ;i cups water I tbsp butter or margarine 1 can (10% ozs.) condensed cream of mushroom soup 2 tbsps. chopped pimiento 2 l ib. flank steaks 2 tsps salt V4 tsp. popper 2 tbsps. shortening 14 lh. mushrooms, sliced *2 cup half and half 14 tsp paprika Cook rice according to package directions using cups water and I tablespoon butter Stir cup soup and pimiento into cooked rice. Slit each flank steak horizontally from one long side to within l/-/ inch of the other with a long sharp knife*. Open and lay flat. Pound slightly to flatten evenly. Sprinkle with salt and pepper. Spread each steak with rice mixture, leaving outer I inch free. Carefully roll caf h steak with the grain lengthwise, jelly-roll fashion. Fasten together securely with metal skewers or tie with cord. Brown rolls in shortening in a 12-inch skillet, turning carefully to brown all sides. Add 14 cup water; cover tightly and cook over low heat until meat is tender, about 114 to IC2 hours. Add remaining *4 cup water if needed. Remove rolls from pan drippings and let stand 15 to 20 minutes before slicing with sharp knife. Add mushrooms to pan drippings and cook until tender, about 5 to 8 minutes. Stir in remaining soup, half and half, and paprika; heat. Serve over sliced rolls. Makes 8 to 8 servings.
