Jelly Season Returns with Fragrant Fruit Juices
Fragrant odors of fruit juices cooking announce jelly season. Homemakers feel a sense of satisfaction as colorful jellies line up in trim rows on the shelf.
Jelly Making Tips From A Home Economists Notebook
Not all housewives master jelly making. Use sugar acid and pectin in proper proportions. Beet or cane sugar may be used. Add lemon juice per cup of fruit juice if fruit is underripe or tart for better texture and flavor. Follow commercial pectin directions if used for better color and quicker cooking. Small juice lots 6 to 8 cups boil down fast preserving flavor. Prepare fruits by trimming and not removing skins. Extract juice by pressing through a jelly bag without squeezing. Some fruits need a second extraction. keep juices separate to preserve clarity. Combine sugar with juice and boil until jelly tests.
