Sugar test for jelly making saves waste and spoilage

A USDA Bureau of Chemistry method uses 95 percent grain alcohol to test juice by precipitating pectin. The amount of sugar used depends on how the pectin precipitates: lumped requires one cup sugar per cup juice, multiple lumps reduce to about three quarters, and no lumps or no precipitation calls for half or less. If no precipitation occurs, mix with apples or pectin-rich juices. Taste the juice first as tart fruits may need mixing.
