Sugar Rationing Sparks Strawberry Jam Tips

Home canning remains possible under sugar rationing with a five pound per person allotment. Preserving Berries in Jars Using Water Bath Method

Pack raw berries into hot jars with a wooden spoon to avoid crushing. Add four tablespoons sugar, fill with berries, seal as appropriate, and process in a water bath for ten minutes. Remove, complete sealing, then cool in a cool dark place. Jars shrink during processing, so leave them about three quarters full. Do not open the jars to test.
