Preserving Fruits for Desserts and Canning Tips
Home canners should harvest pears and peaches only when ripe, sort by size, wash thoroughly, and remove skins or stones as needed. Use hot packing, heat fruit in juice or syrup, and consider corn syrup as a sugar substitute with guidance from Ball Blue Book editor Gladys Kimbrough. Flavoring options include vanilla, orange, nutmeg, or almond extract, and peaches and cream cake serves as a fitting finish.
