Vacuum packed haute cuisine showcased in Hudson Ohio cooking class
French chefs Andre Genin and Patrick Grangien demonstrated vacuum packing to serve high end meals at a charity dinner. They prepared duck breast and other dishes in plastic pouches, cooked in boiling water, then plated for guests. The technique aims for freshness and ease, with plans to expand to more restaurants as they produce frozen style meals.
