In Florence Township the Holden Zimmerman and Sayler families continue a maple syrup tradition now led by Carolyn Sayler and Milton Sayler with Milton’s father Ray Zimmerman and Joe Knoble. They tapped about 1 000 trees using plastic tubing and buckets, boosting production with automation and a hillside pipeline system. They aim for 250 gallons this season as weather allows and note Ohio ranks among the top maple producers while exposing the labor and process from sap to syrup.
