Stretching sugar for canning peaches guidance issued
The Department of Agriculture advises homemakers to substitute corn syrup for up to one third of sugar and honey for up to half in preserves. Peaches can be canned without sugar by cooking in their own juice with minimal water, but avoid strongly flavored syrups and brown sugar. Methods include drying, feeding, and pickling, with specific peach canning recipes using sugar, corn syrup, and water, plus processing times in boiling water.
