Freezing and Canning Sweet Corn Tips from Iowa State
Leslie Smith, extension nutritionist at Iowa State College, offers guidance for freezing and canning sweet corn. Select tender ears in full milk stage. process from garden to freezer in about an hour. Husk, wash, trim, scald four minutes, cool in cold water, then cut kernels and pack dry in freezer containers. Corn on the cob uses more space and may be lower in quality, but can be kept if space allows and for special occasions.
