Owner-chef Simon Bates conceived a refined corn dog inspired dish during a San Francisco visit. Cooks dip hot dogs in house-made waffle batter instead of cornmeal, and serve with pumpkin butter and chicory-coffee gastrique lending a vinegary tartness. Price: seven dollars for two.
Merchants owner-chef T.K. Peterson aims to let creativity fly with a four course menu featuring Yu catan style pork served build your own style with garlic masa flatbread local pinto bean salad chimichurri chicharrones and tropical hot sauce. The prix fixe for dinner is $35 and $17 for lunch highlighting the restaurant's versatility beyond typical Midwest pub fare.
Nick Wysong, owner-chef of Ingredient, describes his Restaurant Week menu and the goat cheese croquettes. Size small plates include sweet-potato bisque and a Maine lobster roll. The croquettes are rolled in flour and panko, fried to a soft crisp, with lavender honey and lavender drizzle for the earthier honeyed note. Cost is $9.
Ramen Bowls co-owner Shan tel Grace explains a tsukemen style dish served cold with miso broth for dipping. A revised Restau rant Week offering may debut next summer with iced broth, plus teriyaki chicken or tofu, priced at $19 for the three-course prix fixe menu or $12.50 a la carte.
