USDA Reports Beef Demand Rises as Supply Shrinks in 1972
The January–April 1972 period shows beef, veal, pork, and lamb production down markedly while consumer demand strengthens. Cattle on feed rose 8 percent, yet beef output matched last year as gains in fed cattle offset cow beef declines. Pork and veal also fall, with sharply reduced slaughter under Federal inspection rising overall plant counts.
