USDA Extends Comment Period On Oils In Meat And Poultry
The USDA extends public comment until January 11, 1971 on possible changes to inspection rules governing water and oil base solutions in meat and poultry. C&MS notes oils aid core retention and tenderness in meat while preventing dryness and aiding flavor dispersion in poultry. Two comment copies must be sent to the Hearing Clerk in Washington DC 20250 by January 11 1971, and all comments will be available for public review.
