Jewel Graham of Iowa State College advises starting with clean equipment and jars. Check jars for defects and use new closures, wash caps rubbers and jars, and prepare a rack for boiling water baths. Use pressure canner for low acid vegetables and ensure gauge and safety valve are functioning.
