Commercial drying of foods gains ground in wartime
The passage notes that sun drying has long been common but large scale commercial drying is recent. Since 1900 dried milks and powdered eggs appeared, and since 1923 skim milk solids have fed into white bread. Drying preserves most nutrients though vitamin C may fall with heat while vitamins A and riboflavin remain stable. Minerals largely stay intact and dried foods are often more digestible, sometimes tastier, sometimes less palatable, a consideration in wartime.
