Exhausting Air From Cans Prevents Canning Losses

Tests by the APS Agricultural Experiment Station show that proper exhausting of air from products and head space prevents buckling of cans during retort processing. No 2 cans buckle around 41 psi, No 8 cans at about 22 psi, and internal pressures rise with higher sealing temps. Lower sealing temps raise pressure. 180 F sealing eliminates buckling for 250 F processing. Product type and head space also influence buckling.
