Marketers Take Bigger Bite Of Food Dollars Says Economist
Economists Kenneth Egertson and Paul Hasbargen of the University of Minnesota report that only a small share of the grocery bill returns to farmers, as processors wholesalers retailers restaurants and transport firms claim a growing slice. They note marketing costs have driven higher food prices since 1974 and that bread costs reflect processing and shipping more than grain prices. Livestock price changes more directly affect retail meat prices, they say.

Low calorie rhubarb sauce fits a dieter’s plan
Iowa State University extension nutritionist Kay Munsen says rhubarb is diet friendly when sugar is limited. A half cup of rhubarb sauce with default sugar has 190 calories, but cutting sugar drops calories quickly to about 70 per half cup with 1.5 tablespoons sugar per cup raw rhubarb, or 20 calories per half cup using a low calorie sweetener. The article discusses processing margins in food, noting beef and wheat differ in processing and that most shoppers prefer paid processing and service, with a typical 60 cent marketing margin per food dollar in industrial economies.
