Chocolate lava cakes with molten centers. Recipe uses 8 ounces bittersweet chocolate 1 cup unsalted butter 4 eggs 4 yolks 7 tablespoons sugar 1/ cup flour. Bake at 375 for 12 16 minutes in greased ramekins. Serve warm with vanilla ice cream and optional fudge sauce.
A simple fudge sauce combines 1 1/2 cups bittersweet chips 1/3 cup water 1/3 cup corn syrup and 1 teaspoon vanilla. Experiment with extracts or liqueurs, melt gently, adjust texture with water or more chocolate, and serve over lava cakes ice cream or enjoy by the spoon. The sauce can be made ahead and kept warm on the stove.
