Boning Meat Saves Freezer Space and Extends Freshness

L. J. Bratzler of Michigan State College advises boning meat before packaging to save 30 to 40 percent of freezer space. Boneless cuts wrap tighter and store better, with ground meat not keeping as well as steaks or roasts. He also urges family tailored cuts and notes salt accelerates rancidity in pork sausage. Cured meats store poorly frozen. wrap tightly in moisture vapor proof material. Beef and lamb last six to seven months, pork and veal three to four months.
