We used to have fights because I wanted to go with him, but he’d never let me. I got tired of fighting with him and just gave up. I knew he couldn’t be playing all night, but he’d never get home until 7 or 8 the next morning. He never talks about his music jobs and he has friends I don’t even know. He has another job during the week, but his country music weekend jobs are what bother me. He just lives from weekend to weekend. Also, he leaves me without any transportation so I can’t check up on him. We never do anything as a family. We have two sons who are getting to be mama’s boys because their father has so little time for them. I feel so all alone. I have no one I can tell my troubles to. Can you help me’’ NEGLECTED DEAR NEGLECTED:    You need more help than I can give you in a letter. If you can’t get your husband to agree to get counseling with you go without him and get some pointers on how to handle an immature husband, because that’s what you have. ♦ * * DEAR ABBY: About a year and a half ago my sisters gave me a beautiful baby shower. I never did send thank-you notes for all the lovely gifts I received. I really meant to but I never got around to it because so many things happened all at once. (For one thing, I got pregnant again.) Anyway, I still want to send thank-you notes for the gifts I got at the shower for my first baby, but I don’t want anyone to think I am sending them now to get a gift for my second baby. I could say something like: 'i’m able to use the first gift you gave me for my second baby, so I am sending you a double ‘thank you.’ Because of all the wonderful gifts I received at the shower I haven’t had to buy a thing.’’ (This is true.) A LITTLE LATE DEAR LATE: Since you put it that way, I doubt if anyone will think you are hinting for a second gift. * * * DEAR ABBY: Cindy, my 12-year-old daughter, said Joy, her best friend, asked her what she got from her godparents for Christmas and Cindy was; ashamed because she didn’t even know who her godparents were. Cindy said Joy described all the lovely gifts her godparents had given her for other oc- j casions and Joy also said godparents are suppose to give their godchild gifts for Christmas, Easter and birthdays. Now Cindy feels cheated and hurt and wants to know how come her godparents never send her gifts. What shall I tell her? Doctor: Warts Are Hexed Off NEW YORK — A distill-guished dermatologist today asserted that in removing warts in children, “the remarkable thing is . . . you can actually hex them off.” Dr. Walter B. Shelley, chairman of dermatology of the University of Pennsylvania school of medicine, wrote in the De-c e rn b e r issue of “Family Health’’ that he has “a dermatologist friend whose biggest therapeutic aid in the case of warts is a very ordinary shiny bracelet. She tells a youngster to wear it until the wart is gone . . . By Craig Claiborne New York Tim** Now* Service OVIEDO, Fla. — Superficially there isn’t much to distinguish Oviedo (pronounced o vee’-do) from any other small town In the central sector of Florida. It’s a sleepy village with lots of Spanish moss and palmetto, and most people in nearby Orlando never heard of ii In fact, there are probably a lot of people in the town itself who do not know that Oviedo is what might be called the watercress capital of the world. Watercress is — with its deep green color and roughly-heart-shaped leaves - one of the most eye-appealing greens known to man, and its peppery flavor gives a desirable Blip to salad bowls. Crown All Over Watercress us by no means “typically’’ American. It is grown all over the world including China, France, Italy, Switzerland, Cuba and England, Britain, in fact may be the nation that prizes it most highly. There are approximately 30 watercress producers in America — Ohio, California, Tennessee, Texas, Colorado and so on; more than twice that number thrive in Britain. The B. & W. watercress farm here — the technical name is B & W Quality Growers, Inc. — has two owners, Don Weaver, 43 years old, and Richard Burgoon, 36. “My wife’s family,” Burgoon explained, “started the business here about a hundred years ago.” Today, the firm distributes its product, generally by refrigerator truck, sometimes by air, from Texas to Canada and throughout the East Coast. New York City consumes almost 65 percent of its output. Watercress, as the name implies, depends on water — lots of it — for its sustenance. The 150-acre B & W farm is divided up into enormous, rectangular sunken tracts or beds — each about a sixth of an acre. These are constant^ moistened by artesian well water. No one has ever devised a method to harvest watercress mechanically, and thus it is all done by hand labor. There are workers in the field who have been at their occupation for 25 or more years. Affeer the watercress is gathered and bundled, it is carted to the packing house, where the bundles are chilled immediately in cold water and run on an “endless” conveyor belt until it’s time to box them. The boxes are iced and eventually relayed to refrigerator trucks for the journey to wherever. Watercress is excellent in salads either alone or tossed with other greens such as Boston lettuce or Belgian endive. It also makes excellent soups and is the classic garnish for roast chicken — Poulet Roti au Cresson. Some recipes follow: Watercress and Mushroom Soup I lh. mushrooms 5 tbsps. butter BEEFY CHILI BOWL For a new twist try lima beans in your next chili recipe. In skillet brown I pound ground beef with I teaspoon chili powder; stir to separate meat. Add I can (10*4 oz.) beef gravy, I package (IO oz.) frozen lima beans, cooked and drained and Vc cup ketchup. Heat and stir. Serve over corn bread. Yield: 4 cups. Salt and freshly ground pepper, to taite J tsp. lemon juice I bunch watercress (about three-quarters lb.) Va cup coarsely chopped onion 3 cups rich chicken broth 3 tbsps. flour Cut off the stems of the mushrooms and chop. If the mushrooms are very small, leave the caps whole. If they are medium-size, cut them in half. If they are large, quarter them. Melt three tablespoons butter in a saucepan and add the chopped mushroom stems and the caps. Sprinkle with salt, pepper and lemon juice. Cover closely and cook about IO minutes, stirring occasionally, Drain but reserve the liquid. There should be about three-quarters cup. Set the drained mushrooms aside. Cut off and reserve the tender leaves of the watercress. There should be about four cups loosely packer!. Chop the watercress stems coarsely and set aside. In a heavy kettle, heat two tablespoons butter and add the onion. Add the chopped wtaercress stems and stir to wilt. Cook about two minutes and sprinkle with flour. Measure out one cup of mushrooms and set aside. Add the remainder to the kettle. Add the mushroom liquid and the chicken broth, stirring. Simmer IO minutes. Add the mixture to the container of an electric blender — it may be necessary to do this in several steps — and blend coarsely. Return the soup to the kettle. Add the cup of reserved mushrooms and the watercress leaves. Bring to the boil and serve hot. Yields six servings. Poulet Roti au Cresson Chicken with Watercress I three-lb. chicken Salt and freshly ground pepper to taste I bunch watercress 4 tbsps. butter Preheat oven to 450 degrees. Sprinkle the inside of the chicken with salt and pepper. Cut off the bottom stems of the watercress, about halfway up the stalks. Stuff the chicken with the stems and reserve the leaves in a plastic bag to keep them fresh. Truss (sew up) the chicken. Sprinkle the outside of the chicken with salt and pepper. Lay the chicken on one side in a small baking dish and dot the top side with half the butter. Place the chicken in the oven and bake, basting occasionally, about 15 minutes. When golden, turn the chicken onto the other side. Bake 15 minutes, basting often. Turn the chicken onto its back and bake 15 minutes longer, basting. Dip the chicken so that the inside juices run out into the baking dish. Untruss the chicken. Carve the chicken and arrange on a warm platter. Pour the pan juices over. Heat the remaining butter in a skillet until it is hazelnut brown. Pour over the chicken. Garnish one end of the platter with the reserved watercress leaves. As the chicken and watercress are served, spoon a little of the natural sauce over both chicken and watercress. Yields four servings. © 1974 by NEA, Inc. "Don’t be sad.
