Correct Cooking Cuts Vitamin Loss In Vegetables

Miss Vera Akers advises quick cooking and minimal liquid to preserve vitamins during spring garden vegetables. A small water layer creates steam, preserving nutrients for sauces or gravies. Do not drain cooking water. vitamins survive better in acidic conditions and air exposure should be minimized during cooking.
