Vitamin preservation tips for fresh and frozen produce

Use vegetables soon after purchase or bring them in from the garden. Refrigerate or keep in cold storage to reduce vitamin loss. Quick frozen vegetables should be cooked without thawing, dropped directly into boiling water, to protect vitamin content. No evidence that quick freezing and later storage at low temperatures damages vitamins.
