Soda in cooking green vegetables question and answer
A reader asks about using soda to keep greens colored. The answer notes spinach stays green in neutral or faintly acidic water, while longer cooking like green beans needs slightly alkaline water. Use a small amount of soda, no more than 1-14 teaspoon per quart, to preserve color but avoid excess as it softens vegetables and may destroy vitamins.
