Process Makes Better Apple Pies

Geneva New York AP reports scientists at the state agriculture experiment station have devised a calcium salt dip to firm apple slices for pie making, notably McIntosh. Soaked for 30 to 45 minutes then rinsed, the slices can be used fresh or canned or frozen. Calcium lactate proved especially effective, with two ounces per gallon treating at least half a bushel. The firming works best on fruit only slightly softer than ideal for pie and may not suit overripe fruit.
