Vegetables and Fruits Fine Dinner Menu for Hot Weather

A New Jersey extension foods specialist at the state college of agriculture offers hot weather dinner ideas using vegetables from gardens. One suggested menu pairs beets, string beans, peas, Swiss chard and potatoes au gratin with dessert, replacing meat with dairy. Another menu features carrots, cauliflower with cheese sauce, sliced tomatoes, spinach with poached egg and squash, followed by cherry pie or raspberries and ice cream. Leftovers can form salads for lunch or supper, with separate vegetables lightly dressed an hour before serving. Cucumbers, tomatoes and cabbage can boost salads for the family.
