Cook Vegetables Quickly and with Little Water
Miss Mary E. Thomas of State College explains that quick cooking with minimal water preserves vitamins and minerals. Boiling with boiling water and rapid return to boil saves nutrients, while leafy greens cook 10 to 15 minutes, up to 30 minutes max. Medium sized vegetables retain more nutrients. overcooking mushes texture and dulls flavor.
