Food Preservation Value of Sugar in Freezing Fruits

Ruth Foster notes sugar improves freezing fruit quality while sugar substitutes underperform. Reduction from normal sugar amounts is possible, with ratios of up to five parts fruit to one part sugar. Strawberries raspberries and cherries freeze well without sugar for two to three months, but sugarless packs lack long term satisfaction. Blueberries cranberries gooseberries currants sliced apples and pineapple freeze better without sugar than soft berries and stone fruits. Rhubarb defies the general rule and freezes better without sugar. Sugar substitutes suit canning more than freezing.
