Refrigerate most exotic cheeses rather than freeze them as freezing makes them crumble. If you must freeze, cut into pieces and wrap tightly, freezing at 0 F or below for up to six months. Suitable for Brick Cheddar Edam Gouda Muenster Port du Salut Swiss Provolone Mozzarella Camembert. avoid Blue Roquefort and Gorgonzola.

Storage tips for cheese and salad dressings
For best results keep salads and dressings light on cheese. Leave cheese in original wrappings to reduce contamination. Cover cut surfaces with waxed paper foil or plastic. Dip large cut surfaces in melted paraffin for long term storage. Trim surface mold on hard natural cheeses before using. If mold penetrates interior of non mold ripened cheeses like Cheddar and Swiss discard.
