Utah figures show pre-Thanksgiving processing surpassed two million pounds at the Utah Poultry plant in Salt Lake City with more expected before season end. Department of Agriculture predicts a 30 percent rise in turkey production to about 2,161,000 birds, driven by favorable climate and market shifts toward larger, ready-for-stuffing birds and half or quarter cuts.
