Organic pear processing at Kelseyville Packing

Staff correspondent reports Kelseyville Packing Company in Lake County now dries pears using an organic process developed by UC Davis in the 1960s. The pilot, begun in September, aims to utilize overproduced pears, with seven bins dried daily. Steps include ice water wash, peeling, drying, and steam blanching, then dehydration to 18 percent moisture. Plant manager Don Gayaldo notes ripening consistency as the main challenge and highlights Bartlett pears as ideal. The firm is also exploring pear taffy, nectar, and puree by products.
