New York Chili Champ David Schwadron Eyes World Finals
East Northport NY retiree and former Air Force officer David “Chili Dave” Schwadron won the New York State Chili Cookoff at Queens Botanical Gardens out of 25 teams. He will travel to California for the World Chili Finals this month with his wife Susan, flying courtesy of Pan Am. The veteran plans a Tex Mex restaurant someday and shared his recipe and cooking notes for a 10 pound brisket chili scaled to a 12 inch skillet. He emphasizes beans-free Texas-style chili and tasting every 30 minutes during the 3 hour cook.
