New potato to cut fat in chips debuts this fall
After more than a decade of work, Agriculture Department scientists unveil Chipeta, a new low fat potato variety. It grows easily, resists bruising and diseases, needs less fertilizer, and fries to light golden chips. High dry matter aids starch, protein, and fiber delivery, absorbing less fat during frying. ARS researchers with Small Grains and Potat Germplasm unit began development in 1980.
