The article describes mild flavored Spanish peppers used in canning as thicker and tougher than sweet bell peppers, smooth in contour and ridged free. Peppers should be picked early morning and handled to avoid bruising, sorted in shallow trays, and canned whole if medium and uniform. Irregular pieces may be cut into strips for canning or for sauces, soups, or relishes. Remove seeds by cutting the peppers.
