Indian Summer opens doors for inspection

Seattle welcomes the public to an open house at the new Indian Summer dining hall located in the Douglas building at Fourth and Union. The event showcases a future restaurant with modern sanitation, a stainless kitchen, and a $75,000 setup featuring advanced sterilization equipment and a central gas range. Managing partners J. J. Lawson and C. A. Lahrman outline plans for high quality meat, seafood, dairy, and bakery supplies, with pheasants and partridges on the menu under strict import regulations.

Importer uses licensed birds to meet restaurant demand

The Henningten Produce company coordinates imports of 10,000 live game birds under a special license. An affidavit must state each bird’s number and that body feathers are destroyed. Birds for eating are wild and trapped or shot, causing a game shortage and limiting service to top restaurants.
