Cooked Potatoes Lose Vitamin C Rapidly at Room Temp
Cooked potatoes stored at room temperature lose vitamin C quickly. Potatoes with skin retain some but fall by 33 percent after 30 minutes, 50 percent after an hour, and complete loss after four hours. Therefore noon meal potatoes left uneaten at supper aren’t a reliable vitamin C source.
