Strawberry season begins with fresh berries and cream or shortcake. Do not wash berries until ready to use to avoid souring. Classic shortcake uses biscuit-like dough and can be topped with whipped cream or a light strawberry topping. Variants include jelly meringue and a light syrup to pour after serving.
