Demand for farm products does not rise with national income in lockstep. Economists Earl O Heady and John Heer explain that “income elasticity of demand” measures how much a product’s demand grows as income increases. For example a $1,000 income rise might shift spending to home luxuries and better foods, while other uses vary.

Elasticity of demand for farm products rises with income
The article explains how a 1000 dollar income increase changes spending patterns, with some goods rising and others falling. It notes the concept of stretch or elasticity, stating Hendy and Heer estimate the elasticity for all farm products at about 0.25, meaning demand grows only a quarter as fast as spendable income per person.
