Fruits Better Canned Fresh Than Frozen
Jewel Graham of Iowa State College extension nutritionist explains that freezing fruits to can is costly and may reduce quality. She notes skins toughen on bing cherries, red sour cherries shrivel, and peaches apricots darken with thawing. Canning in tin or glass with metal lids isn’t satisfactory for sulfur treated fruits. Defrost in original container, then boil six minutes before sealing and processing: 15 minutes per pint, 20 per quart in boiling water.
