Bulls Could Replace Steers As Main Beef Source
Washington AP reports live stock scientists at USDA study sex alteration in bulls to boost marbling and meat yield without DES. Tests at Clay Center Nebraska show altered bulls produced 12 to 15 percent more protein and 14 to 15 percent less fat than steers, with faster gains and heavier carcasses. Methods include short scrotum and Russian castration, with no advantage found in short scrotum.
