Potatoes must be dug when tops dry says Nebraska experts

Nebraska Experiment Station horticulturists urge digging potatoes as soon as tops dry to prevent rot. For temporary storage, spuds can be heaped in a boarded, open enclosure and covered to shed rain, keeping until December 1. Further storage guidance is in Emergency Bulletin No. 16 from the Extension Service at University Farm Lincoln.
