New Boiling Periods For Home Canning
Howard W. Blakeslee reports from the Society of American Bacteriologists on revised home canning boiling times to reduce spoilage. Studies by R. G. Tischer and W. B. Esselen show some vegetables require 5 to 13 hours of boiling, with acidity and faulty sealing affecting safety. Fruit and tomato acidity lessen boil times, and researchers urge rewriting home canning guidelines to reflect safer durations.
