Edible film slows ripening of fresh produce
A USDA chemist has created a cheap edible coating that can be applied to fruit and vegetables to slow ripening. The emulsified film, using oils waxes and cellulose with a novel emulsifier, keeps fat dispersed in water and extended shelf life at room temperature. Tests show tomatoes with the film show far less ripening after 15 days than untreated fruit.
