Beef market seeks leaner cattle for better carcass yield
Oregon State University extension animal scientist W. D. Frischknecht says market demand favors steers with low fat and high quality Choice grade. Excess fat reduces value and increases feeding costs, with potential differences up to 64 dollars between Yield grades 1 and 4 on a 650 pound carcass. Oregon cattlemen, aided by OSU programs, are shifting away from low yield cattle as education efforts expand in Umatilla and Jackson counties.
